Restaurant Consulting & Menu Development for Afternoon Tea | Sugarbird
Restaurant Consulting · Menu Development · For Cafés, Restaurants & Hotels

Your slowest hours are your biggest opportunity.

I built Sugarbird Sweets & Teas from a farmers' market table into a multi-channel afternoon tea brand. Now I offer restaurant consulting and menu development to help café owners, restaurants, and hotels add a high-margin afternoon tea service — with a kitchen prep system your existing team can run, no pastry chef required, and a program designed to launch in three months.

The Problem

Every afternoon is an opportunity.
Most operators leave it on the table.

Weekday afternoons, weekend sittings, private buyouts. Afternoon tea runs on premade product with two staff and is priced at $35–$55 per person depending on the menu — and it has become one of the most photographed and sought-after dining experiences among women 25–55, the exact demographic driving café traffic.

Without Afternoon Tea

  • Dead hours, 2–5 PM, every weekday
  • Staff idle while fixed costs run
  • No afternoon draw on any day of the week
  • Competing on coffee alone
  • No private event revenue

With Afternoon Tea

  • $35–$55 per person, weekday and weekend sittings
  • Sandwiches prepped the day before, scones baked morning of
  • Tiered tea added to brunch lifts the check average with no extra setup
  • An experience guests photograph and share
  • Pre-paid private buyouts fill weekends in advance

Your highest-margin shift.

The Sugarbird Difference

Afternoon tea is not stuffy.
It never had to be.

The white-glove, silent dining room version is one interpretation. Sugarbird is a different one — casual enough for a solo diner on a Tuesday, sophisticated enough for a fifty-guest garden party on a Saturday. The experience scales to the occasion, not the other way around.

01

Any size, any occasion

A solo diner treating herself on a weekday. A pair celebrating a birthday. A mom's group of ten. A corporate team of thirty. Same staples, same warmth, scaled to the room.

02

Casual and sophisticated at once

A warm teapot, a good scone, and a properly made sandwich is not pretentious. It is generous. The sophistication is in the ingredients and the care of the presentation, not the formality of the room.

03

Scalable from day one

An oven, a kitchen, and access to good bread is the starting point. The menu grows with demand — tea for two up to a full tiered service for fifty — without changing how the kitchen operates.

“Afternoon tea should feel like the best version of a really good afternoon — not a performance.”

Beyond the Daypart

One menu.
Four revenue streams.

This is the part most operators miss. Once the program exists, the same scones and sandwiches earn in four different places — on the equipment, the space, and the labor you already pay for.

Private Events

Your room becomes a venue

Bridal showers, baby showers, birthdays, corporate gatherings. A buyout is a guaranteed minimum, prepaid, on a date you control — no walk-in risk and food cost known before the day starts.

Catering

Revenue without seats

The same menu travels off-site, which removes your seating capacity as a ceiling on what a weekend can earn.

Corporate Gifting

Q4 becomes your best quarter

Scones, teas, and shortbread in branded boxes shipped nationwide. Built from the program you already run, sold to a completely different buyer.

Wholesale

Fill idle weekday capacity

Production hours that would otherwise sit empty become supply for grocers, gourmet shops, and other cafés.

The Program

A complete three-month launch —
with optional support after.

Designed by someone who has run the operation, not someone who studied it from the outside.

01

Menu Development & Program Launch

Your complete afternoon tea program built from the ground up — menu development, sourcing, pricing, styling, staff training, and marketing. Ready to launch within the first month.

02

Ongoing Support

Two months of post-launch consulting: menu refinements, operational troubleshooting, performance reviews, and marketing support to secure a strong start.

03

Optional Continuation

Continue with monthly consulting after the program concludes — seasonal menus, marketing strategy, and growth support, on your schedule.

Three-Month Launch Program

Months two and three included. Continuation optional.

What Sets Sugarbird Apart

Not your standard British tea menu.

Sugarbird brings a Japanese-American aesthetic sensibility to afternoon tea — wabi-sabi minimalism meeting British tradition. The result is a menu and atmosphere that photographs differently, attracts a wider audience, and makes everyone feel like they belong at the table.

01

Flavor-forward recipes

Matcha, ube, fig, black sesame, miso cream cheese. Unexpected ingredients that feel like California and photograph like a destination.

02

Ingredient integrity

Organic unbleached flours and simple natural ingredients. Your guests notice — and so does your food cost when sourcing is done right.

03

Styling that photographs

Every tier and platter is designed to be shared. That organic reach is built into the program from day one.

04

Inclusive by design

A welcoming atmosphere that draws LGBTQ and BIPOC guests alongside traditional tea audiences. A broader room is a fuller room.

05

Multi-generational appeal

From a child's first scone to grandparents savoring a proper pot. Afternoon tea bridges generations in a way no other format does.

06

Ready to deploy

Recipes, supplier network, and marketing materials are fully developed. You move from program start to revenue in under two weeks. No R&D delay.

Kei is the founder of Sugarbird Sweets & Teas, a Los Angeles specialty tea catering company with over a decade in the afternoon tea business. She now provides restaurant consulting and menu development to café owners, restaurant operators, and boutique hotels building afternoon tea programs.

A classically trained pastry chef with Japanese-American heritage, Kei trained at Ferrandi Paris — one of the world's most prestigious culinary schools — and worked as a private chef for celebrity clients before founding Sugarbird. That foundation of classical technique and high-expectation private service is what sets every Sugarbird menu apart.

Kei opened and operated Sugarbird Café in Montrose, California, earning a 4.6-star Yelp rating, a feature on OpenTable, and recognition from the LA Times as one of the top twenty places for afternoon tea in Los Angeles.

Ferrandi training. Celebrity kitchen experience. A decade of catering. Three years running a recognized retail café. Every recommendation in this program comes from that full stack of real experience — not a playbook written from the outside.
